Baking powder biscuits have all the appeal of fresh
bread, but they're really quick. If you don't eat them all, freeze the
rest. They get stale quickly.
Preheat oven to 400˚
Sift together:
1 3/4 cups unbleached flour (2 cups of spelt)
1/2 tsp salt
1 tbsp baking powder
With a knife or pastry cutter, cut in:
4-6 tbsp butter
Add:
1 cup milk (made with water and 1/4 cup skim milk powder)
Stir vigorously with a dinner knife till the flour is all mixed in.
Spoon onto an oiled baking sheet
Bake 12 minutes, then break one open to see that it's not gooey inside.
Wheat or gluten sensitive?
Half oat flour and half rice flour is OK, but not totally gluten-free if the oats are milled in a place that also does wheat. (For those who are allergic to gluten, or celiac, as opposed to just kind of messed up by it.)
