Only one caution: baking is chemistry - there's a reason baking powder is 'Magic' brand. If you're a rookie, I advise sticking closely to my directions. Meaning, do things in the right order. You'll get a good idea what's involved just looking over the list of equipment. Anyway, It's not rocket science. You can do it.

Wheat or gluten sensitive?
My combo these days is as follows to replace 2 cups of wheat flour:
1 1/4 cups brown rice flour
1/4 cup potato starch
1/4 cup tapioca flour
1/4 cup light buckwheat flour
1/4 teaspoon guar gum
You may need to increase the amount of eggs or other liquid. And these loaves will get pretty dry on the counter, so freeze slices or half-loaves.
