Talking about healthy eating opens a whole can of worms. I've tried to make room for them by having a page (Obstacles) where I can share the concerns of readers who can't eat some of the foods in this diet. I was well into developing a webinar for a "preparedness" (transition, or collapse survival) course, but when I was asked to go into detail on the subject of nutrition I backed out, but quick. I'm no nutritionist.
But if I'm presenting this system of eating right, then I should at least explain why I believe it's good for us. At the root of my understanding/belief is bowel health. Everything else follows from that. I read a book meant for people with Irritable Bowel Syndrome awhile back. It taught me what I know. The single-celled lining of the bowel filters our digesting food so the stuff we need gets through the membrane and the waste doesn't.

The lining is supposed to be shed daily like a snake's skin. But if
it's bunged up with the clay-like muck of things like hot dogs and
chocolate bars and donuts, the lining doesn't let go and it gets
breached, allowing bad bits into our blood. Different people have
different responses to this. John Pagano, in Healing Psoriasis, says
this 'leaky gut' allows toxins through, overloading the liver and
asking the skin to do do its extra work. Same with Rheumatoid
Arthritis, only the bad bits cause trouble in the sinovial fluid of the
joints. And so on with many auto-immune disorders. At least this is
what I go on, you have to do your own homework, which is easy on the
