It's good to use as little dairy as possible, to reduce
the industry's impact on climate, the food chain and the soil. People
who eat a 'vegetarian diet' full of pizza, omelets, quiche, and lasagna
are eating lots of animal products.
In this program we eat about a cup of yogurt a day, if any. I eat it to
fight candida. I put milk in a few recipes for baked goods. I have a
small amount of cheese maybe once a week.
It's up to you whether you believe in building bones and preventing osteoporosis by drinking milk. I read The China Study
and I don't buy it. Either way you don't have to use expensive fresh
milk, with all its use of energy for packaging, shipping, and
refrigeration. And you don't have to drive to the store to get fresh
milk all the time. Plus it's easier to make yogurt
with it, because it doesn't have to be scalded, then cooled in a sink
of ice water. I keep some milk powder in a jar in the cupboard so I can
quickly mix up a small quantity for a recipe. Same goes for buttermilk
powder, available at the bulk store.
