
Power Macaroons
They're small, but 150 calories each, so just eat one for a protein and energy boost.
Combine:
... ... 1 cup sunflower seeds, processed to a fine meal
1/4 cup tahini
1/4 cup honey
1/2 cup currants
In a small pot bring to a boil and simmer three minutes:
3 tbsp butter (or oil for dairy-free)
1/3 cup brown sugar
1/3 cup cream (or soy milk, etc. for dairy-free)
Stir in:
1 cup shredded unsweetened coconut
On an ungreased cookie sheet:
Make 20 teaspoon-packed nuggets.
Paste the top of each with the coconut icing.
Place close under the broiler (watch it constantly!!) until they brown.
Let them cool a little and press them down a bit. Then turn them over
and ice the other side. Broil again. Cool and store in a not-so-airtight
container.
