Veggie Burgers (makes 4)

These aren't processed fake-meat patties.

Earlier in the day, or make to freeze:

In a small pot simmer till smooth (about 30 minutes):
1 1/2 boiling cup water
1 vegetable bouillon cube
1/2 cup red lentils
3 tbsp dried mixed veggies (if you have 'em)

In a food processor, buzz until it's a fine meal:
5/8 cup raw sunflower seeds

Make up 3/8 cup of Falafel mix (I use Cedars)
I add 1/4 cup water to the mix)

Mix the sunflower meal into the falafel

Add the cooked lentils.

Grate in one carrot.

Mix thoroughly and let cool completely.

To serve:

Form patties in the lid of a yogurt tub, or to fit your bun size.

Fry in hot olive oil. It only needs to be browned and heated through. Melt cheddar on top by covering briefly. Make sure the burgers don't get steamed. I baked extra large, but quite flat white buns. You don't want the burger hanging off outside the bun.


 


Veggie Gravy

Make 1 cup veggie bouillon

In a small pot on medium heat, whisk together:
2 tbsp butter (let it melt and sizzle)
2 tbsp flour (or two and a half tbsp spelt flour)
bouillon
Simmer and whisk till it’s smooth and thick.
